Vegan Gingerbread Cookies: Perfect for Home or Campfire Adventures


There’s something special about making gingerbread cookies during the festive season and even more so when you can choose between baking them at home or cooking them outdoors over a crackling fire. This vegan recipe is simple, fun, and guaranteed to spread festive cheer wherever you decide to whip up a batch.

Ingredients

  • 2 1/4 cups plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 1/2 cup vegan butter (softened for home baking; melted for campfire cooking)
  • 3/4 cup brown sugar
  • 1/4 cup golden syrup

Method for Baking at Home

  1. Prepare the Dough:
    • In a large bowl, mix the flour, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
    • In another bowl, beat together the softened butter, brown sugar, and golden syrup until smooth.
    • Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
  2. Chill the Dough:
    • Wrap the dough in cling film and refrigerate for 30 minutes. This helps it firm up and makes it easier to handle.
  3. Shape the Cookies:
    • Preheat your oven to 180°C (160°C fan). Line a baking tray with parchment paper.
    • Roll out the dough on a floured surface and cut into shapes using cookie cutters.
  4. Bake:
    • Place the cookies on the prepared tray and bake for 8–10 minutes, or until the edges are golden.
    • Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack.

Method for Campfire Cooking

Follow the same steps to prepare and chill the dough. However, instead of baking, cook the cookies as described below:

  1. Roll out the dough and cut into shapes.
  2. Place the cookies on a campfire-safe griddle or pan.
  3. Cook gently over medium heat, flipping halfway, until the edges are golden and the cookies are cooked through.
