Try at home: Stinging Nettle and Wild Garlic fritters
This one is a little bit of a free-style that we experimented with during our Wild Tots sessions, but they went down a treat with the children and grown-ups, so we thought we would have a go at sharing how we made them!
Ingredients:
- a handful of wild garlic, washed thoroughly
- a bunch of stinging nettles, picked and washed carefully!
- one cup of plain or self raising flour
- a tablespoon of water
- a pinch of salt
Method:
- Carefully remove the nettle leaves from the stem, then chop into small pieces
- Boil the nettles in a pan for 2 mins, drain and put in cold water
- Chop the wild garlic
- Mix together the leaves, add a pinch of salt if desired, and gradually add flour until you reach a batter like consistency – you can add a splash of water if needed
- Roll batter into balls and squash into patties
- Fry in a little oil until golden on both sides
- Leave to cool and enjoy
