Campfire Pumpkin Stew Recipe: Perfect for Autumn Days Outdoors or at Home

- 1 small pumpkin or squash (about 1kg), peeled and chopped

- 1 onion, chopped

- 1 tin of chopped tomatoes
- 1 litre vegetable stock
- 1 tsp smoked paprika
- Salt and pepper to taste

Method (Hob Version):
- Prepare your cooking pot: If you’re cooking at home, use a large pot or casserole dish on the hob.
- Sauté the onion and garlic: Heat a little oil in your pot over medium heat. Sauté the chopped onion and garlic until softened and fragrant.
- Add the vegetables: Stir in the chopped pumpkin, carrots, and potatoes. Cook for 5 minutes, allowing them to caramelize slightly.
- Simmer: Pour in the tinned tomatoes, vegetable stock, and smoked paprika. Stir well, bring to a boil, then reduce the heat. Cover and let it simmer for 30-40 minutes, until the vegetables are tender.
- Season and serve: Season with salt, pepper, and any foraged herbs you may have gathered. Serve with crusty bread or roasted chestnuts, just as you would around a campfire!
