Try at home: Vegan Banana Pancakes!

Ingredients (makes 6 pancakes)
125g self-raising flour
2 tbsp caster sugar
1 tsp baking powder
150ml oat milk
ΒΌ tsp vanilla extract
4 tsp sunflower oil, for frying
1 banana (chopped)

Put the flour, sugar, and baking powder in a bowl and mix thoroughly. Add the oat milk and vanilla extract and mix with a whisk until smooth.

Meanwhile, chop the banana into various sized chunks and stir into the batter mixture.

Place a large non-stick frying pan over a medium heat, add 2 teaspoons of the oil and spoon the mixture in, one pancake at a time.

Cook for 2 minutes on each side – or until the outsides look golden brown.
